PRESSURE CANNING METHOD

IMPORTANT: Read your Instruction/Recipe Manual carefully before each use for important operating instructions. Once you have become familiar with how your Presto Precise® Digital Pressure Canner operates, this condensed guide will become a convenient reference tool.

Getting Ready

  • Select a canning recipe from the Instruction Manual. Prepare jars, lids, and bands. Prepare food as directed for canning.
  • Place the removable pot in the canner. Put the canning rack in the pot.
  • Pour 3 quarts of water into the pot, up to the fill line.
  • Fully insert the power cord and plug into a 120VAC wall outlet.
  • PRESSURE CAN will flash.
  • Press the control knob to select the Pressure Can mode.
  • 1 lights up. Rotate the control knob, adjusting to the specific processing time for the recipe and jar size being used.

Jar Warming

  • Press2 lights up. Fill jars half full with water and place on a canning rack.
  • Remove the regulator from the canner cover.
  • Place the cover on the canner and lock it. Confirm the gasket is on the sensor.
  • Lower the sensor arm and turn the green latch clockwise to lock in place.
  • Press3lights up. Jar warming will take about 20 minutes. At this time, complete food preparation.

Fill Jars

  • Canner will beep twice, and 4lights up.
  • Unlock and lift the sensor arm. Remove cover.
  • Lift out one jar at a time. Discard water from the jar and immediately fill the jar according to the canning recipe. Position the lid and secure it with the band.

Venting

  • Place the cover on the canner and lock it. Lower the sensor arm and turn the green latch clockwise to lock in place. Confirm that the regulator is not on the cover.
  • Press and HEAT 5lights up.
  • Once the proper temperature is reached, 6 will light up, and the timer will begin to count down.
  • When venting time expires, the unit will start beeping.
  • PUT REGULATOR ON will light up. Using a pot holder, place the regulator on the vent pipe, press down, and rotate so the regulator lever points to the CAN position.
  • Press 7to advance to the canning phase. Beeping will stop.
  • If the air vent/cover lock did not lift during venting, air/steam will continue to release until it lifts.

Canning

  • 8 lights up. The processing time set in phase 1 appears.
  • Once the required pressure canning temperature is reached, the unit will beep twice and CANNING will light up. The timer begins to count down. Canner is now processing.

Cooling

  • When processing time expires, the canner beeps 4 times.
  • COOL lights up. The Cooling phase may take about 1½ hours.
  • When 1lights up, the timer begins the final cool down.

Done

  • When time expires, the unit beeps 10 times and the10 lights up.
  • Press and hold9 for 3 seconds. Confirm the air vent/cover lock has dropped. Unlock and lift the sensor arm. Remove cover.
  • Using a jar lifter, carefully remove jars by lifting straight up. Place jars upright on a towel. Do not retighten bands. Allow jars to cool naturally. Check seals no earlier than 12 hours, but no later than 24 hours.Presto Precise Digital Pressure Canner Quick Start Guide 6

BOILING WATER CANNING METHOD

Getting Ready

  • Select a canning recipe from the Instruction Manual. Prepare jars, lids, and bands. Prepare food as directed for canning.
  • Place the removable pot in the canner. Put the canning rack in the pot.
  • Pour 3 quarts of water into the pot, up to the fill line.
  • Fully insert the power cord and plug into a 120VAC wall outlet.
  • PRESSURE CAN will flash.
  • Slowly rotate the control knob until BOILING WATER CAN flashes on the display. Press the control knob to select the Boiling Water Can mode.
  • 11 lights up. Rotate the control knob, adjusting to specific processing time for recipe and jar size (pints or half-pints).

Jar Warming

  • Press2lights up. Fill jars half full with water and place on a canning rack.
  • Remove the regulator from the canner cover. Never use the regulator when using the Boiling Water Canning method.
  • Place the cover on the canner and lock it. Confirm the gasket is on the sensor.
  • Lower the sensor arm and turn the green latch clockwise to lock in place.
  • Press3 lights up. Jar warming will take about 20 minutes. At this time, complete food preparation and heat at least 3 quarts of water to boiling in a large kettle for later use. More water will be needed if the canner is not filled to jar capacity.

Fill Jars

  • Canner will beep twice, and4lights up.
  • Unlock and lift the sensor arm. Remove cover.
  • Lift out one jar at a time. Discard water from the jar and immediately fill the jar according to the canning recipe. Position the lid and secure it with the band.
  • Place a filled jar on the canning rack and repeat until all jars are filled.

Canning

  • Place the cover on the canner and lock it. Lower the sensor arm and turn the green latch clockwise to lock in place.
  • Press.5 lights up. The processing time set in phase 1 appears.
  • Once the boiling water canning temperature is reached, the unit will beep twice and CANNING will light up. Timer begins counting down.

Cooling

  • When processing time expires, the canner beeps 4 times.
  • 13will light up. At this time, unlock and lift the sensor arm and carefully remove the cover for the cooling period. The timer will count down during the cooling period.

Done

  • When time expires, the canner beeps 10 times and the10 lights up.
  • Press 9and hold for 3 seconds.
